Traditional recipe from Greece
Method
Cut and desalt the cured cod.
Preheat the oven at 180 Celsius without the fan
In a tray, place a very thick layer of chopped onions in thick strips, on top plenty of garlic cut into slices, season with salt and pepper, drizzle with olive oil, add the bay leaves and mix.
Place in the oven until lightly browned and half-cooked.
Soak the stale bread in water.
Make the paste for the coating with all the ingredients of the third layer in the mortar.
Squeeze the bread crumb very well and add it in the paste, then add vinegar and olive oil. Mix it well.
On top of the cooked onions, place the floured cod and bake it until it gets color. Turn the pieces of cod so it gets color on the other side as well.
Place the paste / garlic on top and bake until it turns brown
Let it rest for a bit before you cut it.
