A buttery Christmas treat!
Method
Preheat the oven at 200 degrees Celsius.
Put half the flour in a pan and in a second pan the almonds and put them in the oven to roast. About 15 minutes is enough. Careful not to burn them.
Place the butter in the mixer bucket and whisk for 10 minutes.
Add the icing sugar and beat for another 10 minutes, adding the two yolks and one egg white.
Sift the flour after it cools down.
Add to the mixture with the butter the juice from an orange after first dissolving the soda in the juice.
Add the vanilla, the brandy, the rose water, a little nutmeg.
Gradually add the flour, roasted or not.
In the blender, grind the almonds and add them to the blender.
On the lowest shelf, stir until the ingredients are mixed.
Form the biscuits and hide three roasted whole almonds. Then bake at 170 Celsius in the air for 20 minutes.
Once they cool completely, sprinkle with icing.

800 g all-purpose flour
500 g butter
220 g of sugar
2 vanilla sugar
150 g roasted whole unsalted almonds
100 g roasted and ground almonds
50 ml brandy
1 egg white and 2 egg yolks
½ teaspoon nutmeg
1 tsp baking soda
2 teaspoons of rose water
Juice of 1 orange
Icing sugar for sprinkling
