Orzo pasta in two versions

Vegan with vegetables and with vegetables and country sausage

  Method  

Peel and chop the vegetables

Cut the sausage into small cubes

Fry the eggplant in hot oil and remove it from the pan

Fry the zucchini and take it out of the pan

Sauté the onion, peppers and carrot until wilted and add the garlic

Add the eggplant and pumpkin to the pan

In another pan, fry the sausage and remove it from the pan

Put half the vegetables from one pan to the other and add to both pans the orzo pasta

After about 4 minutes add half the tomato to one pan and the other half to the other

Add a little at a time boiling water and mix (like you would make rizotto) 

Add the sausage back to the pan and mix

  Ingredients  

500 g of orzo pasta

400 g canned tomatoes

1-2 large onions

4 cloves of garlic,

3 Florinis peppers

2 zucchini  (courgettes)

2 eggplants

¼ green pepper

¼ yellow bell pepper

1/2 kilo of Greek sausage
