Oven baked potato croquettes

With a summery yoghurt dip

  Method  

  1. Boil the potatoes

  2. Mash them and add salt and pepper

  3. Add the rest of the ingredients and knead

  4. Preheat the oven at 220°C fan

  5. Shape the meatballs

  6. Brush them with olive oil

  7. Bake for 20-25 minutes

  Ingredients  

Ingredients for 1 kg of mashed potatoes

2 eggs

4 tbsp hard cheese (40 g)

4 tbsp breadcrumbs (30 g)

1 pc. garlic

2 tbsp parsley

2 tbsp mint

salt and pepper

a little olive oil for brushing
