Pancake with 1 potato 2 zucchini 3 eggs

Simple easy and healthy

  Method  

  1. Grate zucchini and potatoes.

  2. Mix milk and eggs well with the whisk

  3. Add the flour and mix

  4. Squeeze well and add the courgettes and potatoes.

  5. Salt, pepper, oil and mix.

  6. Grease a non-stick pan with a brush and fry on medium heat for 2 minutes on each side

  Ingredients  

For the dough

1 large potato (225 g)

2 courgettes (500 g)

3 Eggs

400 ml whole milk

230 g of flour

1 tbsp olive oil

Salt and pepper to taste


For the filling

Feta cheese

Fresh cream cheese

Gruyere or Parmesan

Spring onion

Red roasted pepper

Colorful peppers

Parsley

Oregano

And whatever else you liked
